As someone who drives for a living and has travelled throughout Ontario far more times than I can count, there are a few things I've learned to help relieve the stress.
Hopefully, these tips will do the same for you.
I don't know about other people, but when I'm on an extended trip (railfan or otherwise) I much prefer to eat a meal at an actual restaurant instead of a fast food outlet.  So I keep an eye out for the traditional truck stop.  There aren't as many as there used to be - over the years many of them (especially along Hwys #400 and #401) have been converted to either Wendy's/Tim Horton's or McDonald's. 

If you want a 'meat & potatoes' meal instead of just 'burgers 'n fries', you can't miss if you keep an eye out for a 'Fifth Wheel', 'Husky' or 'Flying J' travel plaza.  Although their services cater more to the long-haul truck driver the restaurants do serve traditional meals at reasonable prices.

If you feel yourself starting to get a little 'dozy' and tired on the road, you'll be surprised how much a short fifteen or twenty minute break or 'power-snooze' will help.  It'll break the monotony of the drive and certainly DOES work to wake you up.  Mind you, your mouth may taste a little pasty so have a piece of gum or a lozenge handy.
